Slow cooked Pork Carnitas


Pork Carnitas on the menu tonight! I have been trying to perfect a carnita recipe for awhile now and I think I finally did it! I bought carnita meat and put a dry rub with olive oil in a zip lock bag the night before. The dry rub was just salt, pepper, season all, crushed red pepper, cayenne, and some herbs. In the morning I fried some bacon up about 6 slices removed the bacon from the pan and placed the pork in the pan and seared each side for about 10 minutes. I then put the pork in the crockpot with chicken broth, chipotle peppers in abdodo sauce, salt, pepper, oregano, basil, and cumin. I then allowed this to cook on low for eight hours. When I took it out of the crockpot it was falling apart! I then shredded the pork and spread it evenly on a baking sheet and put the pork under the broiler for about 25 minutes tossing around occasionally until the meat was nice and crispy! This is definitely the secret to carnitas (the part that I was always missing). I then served on small corn tortillas with red onion, cilantro and lime! They are amazing!!!

New Adventure

Well I am starting a new adventure! I had a beautiful baby girl on May 16th , Paisley Rae! While I was pregnant I developed gestational diabetes and let me tell you this scared the crap out of me! I thought all these horrible things were going to happen to my baby including death! From the moment my doctors diagnosed me gestational diabetes I changed everything including what I ate, drank and  exercised! I immediately stopped all sugar intake. Amazingly enough this was not hard for me because I was doing it for my baby. I religiously checked my blood 4 times a day 1 hour after eating along with taking my medication my blood sugar was always exactly where it should have been but the minute I ate something like white bread my blood sugar would spike! It was then I realized how bad sugars were for my body or maybe it was the day after I gave birth and drank a Sprite and my blood sugar was like 210! I gave birth to a beautiful healthy baby girl and she did not have any problems with her blood sugars which can happen she also only weighed 6pd 15 oz I believe this happened because I followed my doctors diet to to T because I was so scared of what could happen to her! 

Now 2 months later it is time for me to get healthy for my baby girl! Starting tomorrow I am going to change my life! It's not going to be easy but I know that I am strong and I can do it! I am starting a diet under the watch of a doctor and I could not be more excited! I am going to start blogging about different recipes I will use and how my diet is going. I think this will help me stay focused and determined!
