Slow cooked Pork Carnitas


Pork Carnitas on the menu tonight! I have been trying to perfect a carnita recipe for awhile now and I think I finally did it! I bought carnita meat and put a dry rub with olive oil in a zip lock bag the night before. The dry rub was just salt, pepper, season all, crushed red pepper, cayenne, and some herbs. In the morning I fried some bacon up about 6 slices removed the bacon from the pan and placed the pork in the pan and seared each side for about 10 minutes. I then put the pork in the crockpot with chicken broth, chipotle peppers in abdodo sauce, salt, pepper, oregano, basil, and cumin. I then allowed this to cook on low for eight hours. When I took it out of the crockpot it was falling apart! I then shredded the pork and spread it evenly on a baking sheet and put the pork under the broiler for about 25 minutes tossing around occasionally until the meat was nice and crispy! This is definitely the secret to carnitas (the part that I was always missing). I then served on small corn tortillas with red onion, cilantro and lime! They are amazing!!!
